Chewy Coconut Cookies

Ingredients
  • 1 ⅓ cups Cambrooke’s Wel-Made or All-Purpose Baking Mix (147g)
    1 teaspoon baking powder
    ½ teaspoon baking soda
    ¼ teaspoon salt
    ½ cup butter
    ½ cup packed brown sugar
    ½ cup white sugar
    3 Tablespoons water
    1 teaspoon vanilla extract
    1 ⅓ cups unsweetened shredded coconut
    ⅓ cup white chocolate chips

Directions
    1. Preheat oven to 350 degrees F (175 degrees C).
    2. Combine Baking Mix, baking soda, and salt together in a medium bowl; set aside.
    3. Beat butter, brown sugar, and white sugar together in a large bowl with an electric mixer until smooth. Add water and vanilla; beat until light and fluffy.
    4. Gradually blend in flour mixture, then stir in coconut and chips until well combined.
    5. Drop dough by tablespoonfuls onto ungreased cookie sheets, about 3 inches apart.
    6. Bake in the preheated oven until golden brown, about 8 to 10 minutes. Allow cookies to cool briefly on the baking sheet before transferring them to a wire rack to cool completely.
