Combine MixQuick, water, sugar and Pea-Not Butter in a mixing bowl and stir until all ingredients are blended.
Line a 6 muffin pan with paper muffin cups. Divide batter among the 6 cups and bake for approximately 20 minutes in a pre-heated 350 degrees F oven or until golden brown.
Remove from oven and allow to cool in the pan for about 15 minutes.
Using a piping bag, fill with jelly. Stick the tip half way into the muffin and squeeze out a Tbs portion of jelly into each muffin.
